And the best part? This special melon–feta salad is ready to serve in just 10 minutes – strong, right?
On the right plates, this salad also makes quite an impression! How about a splash of color?

Ingredients for 2–3 servings
For the salad:

1/4 seedless watermelon, well chilled

2 cucumbers

4–6 slices of ham (optional)

40 g feta
-
2 tbsp unsalted pistachios

1 tsp coriander seeds
-
1 tsp black peppercorns
For the vinaigrette:

2 tbsp good olive oil
-
1 tsp honey or maple syrup
-
1 tbsp lemon juice
-
0.5 tsp Dijon mustard
-
Salt
-
Pepper
Herbs: Fresh mint | fresh coriander
Preparation

Cut the melon into pieces of different sizes and arrange loosely on a colorful plate. Do the same with the cucumbers.

Optional: place the ham, either torn or rolled, between the melon pieces.

Briefly roast the pistachios, coriander seeds, and peppercorns in a pan without oil until fragrant. Let cool, crush coarsely in a mortar, and set aside.

Crumble the feta over the melon/cucumber pieces.

Finally, scatter mint, coriander, or other herbs on top.

Just before serving, sprinkle with the topping and drizzle the vinaigrette over the salad – enjoy!
