And the best part? This special melon–feta salad is ready to serve in just 10 minutes – strong, right?

Ingredients for 2–3 servings

For the salad:

  • 1/4 seedless watermelon, well chilled

  • 2 cucumbers

  • 4–6 slices of ham (optional)

  • 40 g feta

  • 2 tbsp unsalted pistachios

  • 1 tsp coriander seeds

  • 1 tsp black peppercorns

For the vinaigrette:

  • 2 tbsp good olive oil

  • 1 tsp honey or maple syrup

  • 1 tbsp lemon juice

  • 0.5 tsp Dijon mustard

  • Salt

  • Pepper

Herbs: Fresh mint | fresh coriander


Preparation

  • Cut the melon into pieces of different sizes and arrange loosely on a colorful plate. Do the same with the cucumbers.

  • Optional: place the ham, either torn or rolled, between the melon pieces.

  • Briefly roast the pistachios, coriander seeds, and peppercorns in a pan without oil until fragrant. Let cool, crush coarsely in a mortar, and set aside.

  • Crumble the feta over the melon/cucumber pieces.

  • Finally, scatter mint, coriander, or other herbs on top.

  • Just before serving, sprinkle with the topping and drizzle the vinaigrette over the salad – enjoy!
